This dish was inspired by the caponata, but in reality we do not like at all:)
Mixed Summer Vegetables with Basil Ingredients
- 1 1 zucchini eggplant
- 1 Tomato
- 1 stalk celery 1 carrot
- 1 small onion 1 red onion
- Garlic Black Olives
- 1 tablespoon capers
- Basil Vinegar
Preparation Sauté the chopped onion and garlic in a little oil (or 1 tablespoon water or broth), add chopped celery and carrot and after a minute diced vegetables. Add salt, stir and simmer covered for 10-15 minutes. Remove the lid and raise the heat to dry. Combine olives, capers and sprinkle with a tablespoon of vinegar. Garnish with cherry tomatoes and carrots into julienne strips.
